



Boletus Edulis in Latin, Cepes in French and Catalan, Porcini in Italian. Those wonderfull mushroom are the best ingredient for a great Risotto ai Funghi ( Mushroom Risotto ). Autumn is when you can buy them freshly collected from the woods, all around Europe. More common in the south side of the Alps, they are now available all year round in a dried version. Soaked in warm water they recover all the fragrance.
